Today, that legacy lives on through Oscar Hernández, Ricaurte’s youngest son. A former naval officer and environmental technologist, Oscar returned to the farm after his father’s tragic passing with a clear purpose: to honour the past while redefining the future. Under his leadership, Los Nogales has become a research and innovation-driven farm, blending tradition with microbiology, precision fermentation, and environmental responsibility.

Processing — Where Science Meets Craft
- Hand-picked ripe cherries
- Density sorting by flotation
- Ozone-assisted cleaning

Thermal shock: 80 °C wash followed by rapid cold cooling
- Pulping and anaerobic fermentation with mosto, yeast, and preferment for 120 hours
- Rinsed and sun-dried for ~15 days
The result is clarity, sweetness, and an aromatic lift that’s unmistakably Los Nogales.
