Origin and Producer
Finca Villa Betulia, nestled in the Acevedo region of Huila, sits at an elevation of 1,550 meters above sea level. Luis Anibal Calderón, a second-generation coffee farmer, has transformed this 20-hectare farm into a haven for exotic coffee varieties. Since acquiring the farm in 2005, Luis has dedicated himself to cultivating rare and high-quality coffees, including Geisha, Pink Bourbon, and the distinctive Ombligon varietal.
The Ombligon Varietal
Ombligon is a seed from Ethiopian Heirloom variety. Its name derives from the elongated shape of its cherries and has a belly button shape on the base of the fruits. The “belly button” term can be translated as Ombligon in Spanish, which is why Luis Anibal also refers to this variety as Ombligon.
Processing Method
The Washed Ombligon undergoes a meticulous processing method to enhance its inherent qualities. Cherries are handpicked at peak ripeness, then floated and hand-sorted to remove defects. They are subjected to a 30-hour underwater fermentation, followed by gentle pulping. The parchment is then washed and dried in temperature-controlled conditions until the ideal moisture content is achieved.
Flavor Profile
This micro-lot offers a complex and refined cup. Expect vibrant notes of jasmine, brown sugar, and melon, complemented by hints of molasses and cacao nibs. The cup is characterized by a bright acidity and a silky mouthfeel, culminating in a clean and lingering finish.
